The cellar of the cooperative is located in Bova, one of the hundred most beautiful villages of Italy; the cellar is located on the premises of a 19th century old crusher renovated, which has kept the original features and machinery (grinders, hydraulic press and pump). The cellar is equipped with machinery and equipment of the
latest generation: the press
that allows to make soft pressature in order to ferment the must at controlled temperatures. Other renovated premises are an old millstone now used as barrique shelter.
